Guest guest Posted May 8, 2006 Report Share Posted May 8, 2006 Hi everyone, A friend of mine just had her very first baby yesterday afternoon - a healthy little boy. As part of my baby gift to her and her husband, I offered to make a casserole or big pot of 'something' once a week until their family life settles down (hopefully before the kid turns 18!! *lol*). So, it is time for me to snap into action! My friend is a vegetarian, (mostly) wheat-free and (mostly) dairy free, like myself. Has anyone got any brilliant recipe suggestions as what to make? I've got a few ideas kicking around in my head, but thought I would see if anyone else has cooked meals for another vegetarian in need (new mom/dad, unwell, otherwise too indisposed for cooking). One-pot meal or casserole recipes with a " spring time " twist would be most appreciated. I have a lot of wintery stew and chili recipes, but would like some fresher ideas. Thanks in advance! Does your friend eat beans you can do a rice and bean dish.
