My name's Keith, I'm 30 yrs old, lived on my own since I was 18, the past year I've been back with my parents as per their request due to my father being ill, but his health is improving so I'll be out on my own again in a month or two. I've worked as a chef in a microbrewery, as well as a Jazz-Tapas club. Living in Niagara Falls, Ontario, Canada, has exposed me to years of working in the culinary industry... I've worked in two of the busiest restaurants in north america, cooking of course. Talking in the realm of pulling in 300,000 to 400,000 dollars profit per day... so I'm used to the insanity of the industry. Now, after an illness of my own, I'm preparing to go back to school and keep my culinary skills for friends and dinner parties. I've promised myself the next place I work in the culinary industry will be either my own cafe, or nothing. Luckily I've qualified for a few grants which may make that possble in the next few years. It will be vegetarian, of course... and hopefully at least 50% vegan:) I am a buddhist- but to be honest, a lay buddhist. It's pretty hard to be a complete buddhist without being a monk;) or so I've found. So, I do what I can. Don't let this frighten you off of me, but I am also a lifelong, unwavering anarchist. *flinches* don't think I'm about throwing bombs and stuff- Leo Tolstoy was a pacifist and a famous anarchist- Gandhi was once quoted as saying 'I too, am an anarchist' and most people have misconceptions about what anarchism really is- and they would be surprised to find out that a very large percentage of anarchists are total pacifists. It's not like how the media portrays things. That being said- I strive for pacifism in my life, but I have been training in martial arts and meditating since I was 10 years old- and in certain situations it has simply come about that using my knowledge has prevented someone from being killed- so it's a karmic juggling game to me... I guess you gotta take eack situation individually. Ah well.. A little veggie/vegan shop would be so cool. I have that dream too. Funny to hear you otherwise wanting to get out of the culinary world. That was wonderful you moved back in with the folks to help your mom and dad while he was ill; glad also to here he is doing better and you too... glad you are also on the mend.
