Guest guest Posted May 6, 2006 Report Share Posted May 6, 2006 Seasoned Roasted Roma Tomatoes 2 tablespoons vegetable oil 1 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 12 roma tomatoes 2 tablespoons chopped fresh basil Preheat the oven to 450 degrees. In a large bowl, combine all the ingredients except the tomatoes and basil. Cut the tomatoes in half lengthwise and gently squeeze out the seeds and juice. Toss in the oil mixture then pour into a 9 " x 13 " baking dish. Roast for 20 to 25 minutes, or until tender but not overcooked. Sprinkle with the basil, and serve. Makes 6 servings.
