Guest guest Posted May 3, 2006 Report Share Posted May 3, 2006 i love this stuffed egg recipe and it is a weekend picnic treat and fun to take to any potluck. The addition of curry and jalape–os gives them a little kick, and my deviled eggs have to include dill pickle relish. i was inspired to add the curry from a wonderful cookbook i have mentioned here before called 'Recipes From a Vegetrian Goddess'. i doubled and played around with the recipe a bit and this is what i came up with that works for us: Curried Stuffed Eggs 12 eggs, hard boiled and cooled 4 Tbs. soy mayonnaise [ i used vegenaise ] 1 tsp. red wine vinegar 3 tsp. Dijon mustard 1 Tbs. minced onion 2 or 3 tsp. finely chopped jalape–os 2 tsp. dill pickle relish 2 tsp. curry powder Sea salt Fresh ground pepper Sweet paprika [ poppy seeds are nice, too] Carefully peel and then slice cooled eggs in half, lengthwise. Gently scoop out the yolks into a mixing bowl. Mash the yolks with a fork and add the mayo. Add the vinegar and mustard, blending well. Mix in the onion, jalaps, relish and curry, mixing together until nice and creamy. Taste for seasonings and add salt and pepper if desired. Spoon the filling into each egg half, distributing equally, and place eggs on a serving platter. Dust them lightly with paprika and poppy seeds if you desire.
