So easy with the use of boxed blueberry muffin mix, but you could simply make it with your own favorite from scratch blueberry muffin recipe. The poppy seeds and hint of lemon in the bread and the glaze make this so delicious. Poppy Seed Blueberry Bread 1 package (18.25 oz.) blueberry muffin mix 1 egg 3/4 cup water 3 Tbs vegetable oil 2 Tbs poppy seeds 2 tsp grated lemon peel Glaze: 1/2 cup confectioners sugar 1 to 2 Tbs lemon juice Drain and rinse blueberries from muffin mix; set aside. In a bowl, combine the muffin mix, egg, water, oil, poppy seeds and lemon peel just until blended. Fold in reserved blueberries. Pour into two greased 5x3x2 inch loaf pans. Bake at 350 for 40-45 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans. Combine glaze ingredients; drizzle over warm loaves.
