This is interesting. AJ at spicy veg started a folder called " NOT TNT " recipes

and I placed this one in there. Kenia from my group made it last night and said

it's a keeper. Wanted to pass it to all of you.

Now I think I better try it soon.

Aztec Couscous

 

from Lorna Sass Vegetarian cookbook

 

1 cup couscous

1/2 tsp cumin

1 tsp salt to taste

1 cup to 1 1/4 cups water

1 15 ounce can black beans, lightly drained

1 cup corn kernels

1/2 cup red onion, chopped

1/4 cup minced fresh cilantro

1 jalapeno, minced

3 tablespoons

roasted garlic oil (or saute garlic in oil)

3 tablespoons fresh squeezed lime juice

Place cumin, couscous and salt in a large heatproof bowl and pour

1 cup to 1 1/4 cups boiling water over it..

Cover tightly and let sit for

10 minutes until water is absorbed.

Add a little more water if needed and let

sit.

Fluff with fork.

Toss couscous with balance of ingredients and serve

warm or at room temp.

I've made a similar dish before with quinoa. Very good!!!
