Guest guest Posted April 27, 2006 Report Share Posted April 27, 2006 Spinach Mini Me's xp My kids like these for breakfast, so I freeze them..only cook for 10 minutes then cool and freeze, leave in cups. To finish cooking, let defrost in the fridge overnight next morning put in oven for 10 more minutes, test to see if done if not leave in for 5 more minutes. These can also be used as appetizers, cook and freeze the same way. Or a great breakfast when you have overnight guests. Enjoy! 3/4 cup liquid egg substitute 1 package,10 ozs. frozen chopped spinach 3/4 cup shredded cheese, any kind 1/4 cup diced red or green peppers 1/4 cup diced onions dash hot pepper sauce, to taste Heat oven to 350 degrees. Line 12 cup muffin pan with foil baking cups; spray the cups with the cooking spray. Thaw and drain spinach. Squeeze out excess liquid. Mix the spinach, egg substitute, cheese, peppers, onions, hot pepper sauce, and salt in a bowl. Fill the foil cups with the mixture.
