I used to buy the Kroger brand from Kroger grocery store, but where we have moved to now, there is no Krogers and the health food Stores have none. Judy - Donnalilacflower GROUP Tuesday, April 25, 2006 3:11 PM Louisiana Tofu Cakes with Tartar Sauce This is another good recipe from Akasha Richmond " The Art of Tofu " cookbook Louisiana Tofu Cakes with Tartar Sauce 1 pkg. Mori-Nu extra firm tofu (cut into 1 " cubes, freeze and thaw and pat dry with paper towels) 1 tbl. minced onion or scallions 3/4 cup plain bread crumbs, plus additional crumbs for rolling 1/4 cup minced celery 1/4 tsp. minced fresh jalapeno 1/4 tsp. dry mustard 1/2 tsp. sugar or unrefined cane sugar 1/2 tsp. paprika 2 tbls. vegan mayo or mayo of your choice 1 tsp. Worcestershire sauce (veg.) 2 tbls. toasted wheat germ 1/4 tsp. salt 1/4 tsp. lemon pepper Preheat oven to 350 F. Mince the tofu and mix with the remaining ingredients. Form small cakes about 2-inches across, and roll in the additional bread crumbs. Lightly coat a cookie sheet with cooking spray and place cakes side by side on cookie sheet. Let sit for 15 minutes. Bake for 20 minutes You can also pan saute in a heavy skillet sprayed with non-stick cooking spray, cooking each side for 5 minutes. Serve warm or room temp. with tartar sauce. Tartar Sauce 1/2 cup vegan or regular mayo 2 tsp.s honey or maple syrup 3 tbls. sweet pickle relish 1 tsp. minced shallot or use 1 1/2 tsp onion 1 tsp. minced capers Mix all together and chill until ready to use.
