Yay! Congrats! You know one pot meals with a salad and bread are so filing.

Veggie stews, chile, make a casserole, spaghetti. I like to take cooked pasta

spirals and toss with herbs, olive oil, steamed veggies and place all this in a

dish and add cheese to the top and bake 25 mins on 350. Bean and rice

enchiladas are delicious. Make bean and rice tostadas and add your salad

garnish on top. I personally don't use many alternative meat products but it

sure makes it handy for a quick meal, also for new vegetarians. my reason for

not using them often is I became a veggie when I never saw these products, my

mom wasn't a good cook and she never bought then, too expensive if they were

around for us. I like them just don't use them often, with a busy schedule I

will make a burger on the run now and then. Judy introduced me to FriChik and

it's very good.

Try some of the patty recipes and sandwich wraps in the files.

Make a Mexican pizza, take a flour tortilla and rbown it in a skillet on both

side in a little oil and remove it from the pan, now do another one and then add

hot beans, salsa, rice and chopped onions, put the other browned tortilla on

top, add cheese and it will melt, then put on a plate and cut in 1/2 and each of

you have a half and add a salad.

Get out there and experiment. Ask him what he will miss and create something

like it.

Let us know what he says so we can help you create dishes like his favorites.
