It's probably too late but in any case, most Thai restaurants in the U.S. will

substitute tofu for meat in most of their main dishes. My favorites are yellow

curry, pad thai, and pad see ewe. Hope you enjoyed it! Thai food is one of my

favorites.

I love Thai food, but it does pose a problem:The curries rely on coconut milk which is a high saturated fat food.There are two work arounds:1) Make a "jungle" or "forest" curry, which replaces the coconut milk with broth. I read in a Thai cookbook that coconut milk based curries are common only in the cities where cooks can buy canned products. But in the rural areas (forest or jungle, hence the name) coconut milk is too time consuming to deal with except for special occasions.2) The McDougall approach is to use soymilk with a little coconut extract for flavor. I haven't tried this yet.BTWI've only seen lemongrass in Vietnamese cooking, none of my Thai cookbooks call for it, but it does have a wonderful

flavor.
