Hi Marilyn,

 

Thought you might also enjoy hearing what my husband likes. My husband

willingly offered to do " vegan at home, " so I understand our

situations are a little bit different. He has been open to trying most

foods I make, and there are some that he just LOVES (and I notice that

most of those are typical " man foods " ):

 

-Baked tofu with barbecue sauce

-Baked sweet potato " fries "

-Any kind of whole-grain pasta with an Asian-style sauce and steamed

broccoli (peanut sauce or tahini sauce, for example)

-He loves rice. We have a rice cooker which makes it easy to cook up, fast.

-Chili!! I make it in the slow cooker and he goes nuts over it.

-Pizza (we bought the Nature's Hilights Brown Rice Pizza Crust and

topped it with marinara sauce, veggies and beans).

-Nachos (we bought BAKED tortilla chips and topped them with pinto

beans and salsa and put them under the broiler to heat up. You can add

other toppings to this as well).

-Lentil and Potato stew

-Baked sweet potatoes topped with any bean dish.

 

Those are some foods he goes pretty crazy for =).

How do you make this?

We like these!

Always meant to try this. I LOVE lo mein, and I thought I'd try to duplicate it at home.

 

-He loves rice. We have a rice cooker which makes it easy to cook up, fast.

I have a rice cooker, but it's too small to be practical for such a big bunch! I am looking for a larger one now.

 

-Chili!! I make it in the slow cooker and he goes nuts over it.

My husband loves Dr. McDougall's ten minute chili recipe! Yay!!! :) But I'm hoping to branch out and try some new ones, too. He LOVES really hot chili, and doesn't mind that it has no meat. Go figure.

 

-Pizza (we bought the Nature's Hilights Brown Rice Pizza Crust and

topped it with marinara sauce, veggies and beans).

I'll have to look for a good crust. The only ones I've bought are the white flour ones. No artificials in the one I buy, but not whole grain either.

My husband isn't fond of ethnic foods, including Mexican, believe it or not! Silly man. But I've always wanted to try this as a dinner, and see how it goes. I'm actually having a hard time finding baked tortilla chips!

Haven't tried too many lentil dishes, as he claims he doesn't like lentils. I do. But maybe this one would work with split peas? Is the recipe on Susan's site?

 

-Baked sweet potatoes topped with any bean dish.

Not quite sure what you mean by a "bean dish". He loves baked sweet potatoes, though.

 

He also likes beets, so I'm in the market for some beet dishes. I've made some of the casseroles and patties from a Seventh Day Adventist cookbook, and he's actually liked most of the ones I've tried. So we're making some progress! But now it's full steam ahead, because if he doesn't do this enough to see results, he won't want to continue after the six weeks.

 

I know I sound like a total witch, whining and pushing and complaining! I sure don't mean to. And I (most of the time) don't come off to dh like that, I don't think. I just want what's best for all of us, and this diet issue has been a LONG time with no resolution in sight (although we rarely even discuss it), and I got really, really frustrated and blew up today. Bad me. But I'm not asking for the moon, I don't think--just six weeks of eating without having to deal with the stupid, dangerous meat and dairy! Bah humbug!

 

Oh well--I'm off to do a recipe search! Marilyn

Marilyn , I could almost feel your frustrations and fear as I read you story today.

Please take what I write in the same spirit that I write it.With love and hope for all.

As I read about your husband not caring about eating the healthy foods I was reminded about how my friend drank too much, and we all tried to help to no avail.One day she admitted that she had a problem and would be safer not drinking .She has not had a drink since.What I am saying is that until your husband sees that he would be healthier eating healthier foods he will not change .

Perhaps it will take a heart condition or something worse.

Also , you cook the foods and he eats at home .What about when he leaves home?

I find for myself that drinking green smoothies in the morning gives me some protection from cravings.

Some people even put cooked beans into the smoothies.At least with the green smoothies I am getting green vegetables and fruit.I also love eating raw foods.I go searching on computer for raw recipes.I can even use collard greens.

Last week I made a smoothie from Dandelion pulled from my yard ( I do use pesticides) and washed it very good ,put into the Vita mix with a about 1/2 cup cherry tomatoes.Was so good.I felt so much more energy that afternoon than anything that I have made a smoothie from.I am just sharing my experience ,strength and hope with you.

I must also share that I have been playing with green smoothies for several years before I started eating weeds from my yard.LOL

I have lots of smoothie recipes that I have saved over the years if you wish I will share them with you.The kids love the smoothies.Just do not tell them exactly what is in them before they start drinking.A good way to get green vegetable into the children.

If I were you I would gently ask my husband to read Eat to Live by Dr Joel Furhman with me.

If you learn together ,perhaps it would be easier on both.

He has to sell himself that he needs to change because he is worth it,not for some else.
