It taste so good with a burger of any kind and Right now I truly enjoy portabella mushroom with caramelized onions. Aslo I am looking for Carot soup creamed or other wise. Guest guest Posted March 4, 2010 Report Share Posted March 4, 2010 You can caramelize onions without the oil just like you do with it. The onions have enough oil in themselves to keep from sticking until they start to brown. Then if needed just add a couple tablespoons of water, stir to loosen the brown bits that stick to the pan. Continue this procedure until they are nicely caramelized. Note: I find it works out best to start out without any water in the pan. Otherwise you end up steaming them, not caramelizing them. And if I recall, Susan agrees with that procedure. This link has a carrot soup recipe, including a variation. Guest guest Posted March 6, 2010 Report Share Posted March 6, 2010 For flavor, I like using balsamic vinegar, sometimes apple cider vinegar or wine in the bottom of the pan or pot with the onions.
