Guest guest Posted February 27, 2010 Report Share Posted February 27, 2010 Hi Everyone!This is my first post and probably my last - I'm more of a "lurker" than a participator!I've been vegan for over 30 years, was a vegetarian for 10 years before this, and I've currently been on the "McDougall" program for the last 10 years.I'm here for two reasons really. The first is to find more yummy fat-free recipes from you guys. The second is to let you all know about the new online VEGAN "SUPERSTORE I've setup with my brother John (another vegan of 30+ years). You can view the store here: http://www.veganstore.gorsetreemall.com I've had approval from Dr McDougall for the store so I hope you can all find the time to have a browse (and tell your friends!) and I look forward to your feedback.Here's my one and only recipe that I've created (and this is not a joke - although the name is a bit tongue in cheek!) I eat this EVERY day for my breakfast and lunch! Here goes: SPUD PUD Basic Recipe This should serve 2-4 people or 1 person for 2-4 meals (I eat it for just 2 meals – I'm greedy!) 1 large boiled potato (or 2 small/medium potatoes) 1 large boiled sweet potato (or 2 small/medium sweet potatoes) 1 small/medium boiled carrot 1 tomato (raw) 1 cup of cooked whole grains (I use rice, millet, buckwheat, quinoa) 1 cup of dry oats 1 banana ½ glass of oat milk (or soya milk) ½ glass of water Optional Extras (I also currently add all of the following, but any fruits can be used): 1 apple 1 orange ½ to 1 peach (I use peach slices from a jar, or tin, in fruit juice) 1 teaspoon vanilla essence (or to taste) Other Optional Extras (not necessarily all added at once!) 2oz Tofu 1 teaspoon cocoa powder (or more to taste) Spinach (for a green Spud Pud!) Method 1. I cook the grains the night before. 2. Boil the chopped potato, chopped sweet potato, and chopped carrot together for about 10 minutes, maximum. I only boil these for as long as it takes me to prepare the rest of the ingredients. 3. Combine all ingredients in a mixing bowl and blend until smooth with a hand blender or liquidiser (I use a hand blender, very easy and not much mess!). 4. Serve hot or cold.
