I don't think I have eaten this many vegetables at one time before.Sarah in CA * Exported from MasterCook * Buddha's DelightRecipe By :Serving Size : 8 Preparation Time :0:30Categories : Chinese Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 4 cups broccoli florets -- or use some cauliflower with the broccoli 2 cups bok choy -- sliced thin 2 cups mushrooms -- sliced 2 cups snow peas 1 1/2 cups carrots -- sliced 1/2 cup green onions -- sliced 1/2 cup waterchestnuts, canned -- sliced 1/2 cup bamboo shoots -- sliced 1/2 cup straw mushrooms -- whole, canned 1 cup baby corn -- whole, canned Sauce 1 1/2 cups water 2 tablespoons apple juice -- or sherry 4 tablespoons low sodium soy sauce 3 tablespoons cornstarch 1/4 teaspoon white pepperPrepare vegetables as directed and set aside seperately. Combine sauceingredients in a seperate bowl and set aside.In a wok or large saucepan, place about 1/2 cup water and a dash or two ofsoy sauce. Heat until it boils, then add broccoli, carrots and greenonions. Cook and stir for about 10 minutes. Add mushrooms, bok choy andsnow peas. Cook and stir for 5 minutes. Add bamboo shoots and waterchestnuts. Cook and stir for a few more minutes. Add sauce mixture topan. Bring to a boil, stirring constantly. After mixture boils andthickens, stir in straw mushrooms and baby corn. Cook until heatedthoroughly. Serve over brown rice.Helpful hints: Buddha's delight is a popular vegetarian dish in China.
