suggestions needed for easy lunch/dinner ideas(vegan weight watchers)

Hi,

My mom is an omni and has always been heavier. I have been vegan for a year(in

february). She has lost so much weight on weight watchers, i am so proud of her.

I followed her lead and tried to veganize meals to fit my eating and also to

follow the weight watchers point systems. I am in desperate need of some new

ideas for lunches/dinners. I need some quick and easy meal plans. I am not a

chef, and need some " normal people " cooking suggestions. I do not have alot of

time after i get home from work to cook something that will take awhile. I get

hungry fast, and have been eating (vegan) in site. any suggestions? I am not a

big soupo person, i know i would get suggestions for that. The problem is i am

looking for variety. My husband is not vegan, so what i make i will have to eat

all of it. So a soup recipe would be too much for just me. My husband is

supportive, and does try alot of the things i cook, but he has a very sensitive

stomach when it comes to " greens " and cannot eat alot of what i eat. I love

www.vegweb.com, but have not been finding alot of things. If you have any

suggestions, please let me know. Thank you

Susan has a category for WW Core compatible recipes -- Every recipe I've ever tried of her has been wonderful.  I've got my eye on her Lemony Quinoa with Butternut Squash as I've still got some squash hanging around. Also, her Italian Layered Vegetable Casserole looks fantastic, too.  (Hey, thanks for asking the question, I've got at least two new-to-me recipes to try!).

It's been a while since I've had anything to do with Weight Watchers, but if it hasn't changed too much it seemed to me the core plan could easily be a no-added-fat vegan plan.  Good luck, and let us know how it goes.

I was also reminded about Jeff Novick's (the nutritionist for the McDougall Program) " recipes " for quick meals. They're really formulas more than recipes, making them perfect for customizing to your particular tastes. He uses five basic categories of ingredients that are simple, inexpensive, and easy to keep around:

1) Canned Tomatoes (low sodium)2) Canned Beans (low sodium)3) Frozen Vegetables 4) A Starchy Vegetable (brown rice, potato, sweet potato, barley, etc)
