Guest guest Posted December 14, 2009 Report Share Posted December 14, 2009 Hi Mark, I read your blog post and totally agree with you with regard to Tal's cooking and excess fat in many if not most vegan's diets. That said, however, I follow and support PCRM for many reasons, not the least of which is that they are working hard to get people off meat and dairy for ethical reasons as well as health reasons. If some people stop supporting the killing of animals for our taste buds by by being a "junk vegan" to start, that's fine with me. It's their bodies rather than the bodies of innocent animals. Second, I did the first PCRM Kickstart Program and was very impressed by most of the recipes. If I thought a recipe was too high in fat, and most were very low in fat, I just ignored it. But I got some really good recipes out of participating in the program. I've been vegan for a long time and I must admit I started out pretty much as a junk vegan. I was young and thin and not too concerned or knowledgeable about the health issues at the time. I was, however, very concerned about animals. I ate a lot of meat analogs and tofu that I rarely eat now. Once in a great while. I think I needed that to start and I'm just glad that however I began, I began. Now I can say that I am truly a low to no-added fat healthy vegan and am loving it. And, I was able to get my husband to eat this way as well. I sort of doubt Tal well be cooking the high fat stuff for the PCRM audience, but I could be wrong. If so, I'll just ignore him. Glad to see you posting again here, Mark. He is currently taking on the military to stop animal amputation research and worse in teaching field hospitals. In the PCRM Neal Barnard book "Turn Off the Fat Genes" he uses a recipe he calls corn butter to replace marg or butter in a lot of recipes. That along with water for dry frying and prune puree, applesauce and water for baking should help in any recipe you find that is not too over the top for fatI will try to get the recipe so I can cut and paste it for you.
