You are changing only what you are eating, and by eating these upgraded foods you can actually eat MORE because of their lowered calories, their volume, density and satiety. The variety in a vegan diet is unbelievable. All the colors of the rainbow are represented in a plant based diet. Look upon it as an adventure in good eating and not as a penance to be endured with failure at the end. As Barnard and Esselstyn have said, " You won't get fat by eating foods that have no added oils and other fats attached." I think changing my diet on January 1st just feels too much like all those icky, self-loathing weight-loss attempts of my teen years. I hope y'all will be my cheerleaders, reminding me that people don't have to be trying to lose weight in order to get healthier.
