another vegetable broth question

I made up some veggie gumbo last night and was wondering if I should save

the okra tops that were cut off for " garbage soup broth. " Some veggies

don't really add much flavoring I found and others, way too much (like

celery and asparagus are bitter if added in quantity, IMHO). I don't'

have too much experience with fresh okra since I always bought it

frozen. The CSA has challenged me yet again.

I used okrah tops in a broth once. They were ok. If you like the taste of the okra, give them a try. By the way, I just read two tips to reduce the "slime factor" of okra. If these are old news, feel free to laugh at my ignorance... The two tips were: 1) avoid getting the okra soaking wet when washing them. The cookbook I read specifically reccomended using a damp cloth to clean the pods. 2) soak cut okra in white vinegar ( then rinse it) for a few minutes before cooking.I have no idea if these work though, so please don't get angry if your okra is still slimy :)-ErinSent from my iPhoneOn Sep 19, 2009, at 10:37 AM, pkinnetz wrote:
