Guest guest Posted September 7, 2009 Report Share Posted September 7, 2009 I decided to go ahead and ask Colleen if she was happy for me to post it, and she is.Please take a moment to visit Colleen's websites, www.vegantable.com and www.compassionatecooks.comChana Masala (curried chickpeas)from Colleen Patrick-Goudreau's new book 'Vegan Table' Serves 8 to 102 cups and 2 T water2 large onions, finelly chopped1t minced fresh inger1 T ground coriander1 t garam masala1 T ground cumin1 t ground cinnamon1 t ground cloves1.5 t chili powder2 T sugar1 can (6 oz) tomato paste4 cans (420g) chickpeas, drained and rinsed1 t salt (or to taste)Heat 2 T water in a large pan.Add onions and ginger, and saute for about five minutes, until onions are translucent.Add all the dry spices and the sugar and stir for 30 seconds.Add tomato paste, cook for five minutes. Stir to combine.Add chickpeas and 2C water, cook for 10 to 20 minutes, stirring occasionally.Depending how thick you want your curry, either add more water, or let water cook down.Add salt to taste.
