Egg Replacers-The Distinction?

Susan and others.... Quick question. How do you make decisions re egg

replacers. I have always enjoyed using ground flax seeds but looking

at Susans recipe for Zucchini muffins with cinnamon crumble topping

and it is ENER-G that she recommends as egg replacer.

 

How do you make those distinctions. Could I have just as easily used

the ground flax seed/water combo instead of Ener-G, or is there a

purpose Im not aware of for ENER-G in this recipe?

Hi Tom,For me it's sometimes just trial and error to find out what works best, but beyond that, I look at the recipe and see if I think it's going to need more leavening or more " stickiness. "   Ener-G provides some leavening while flaxseeds, tofu, or bananas do not, so if I'm taking a non-vegan recipe and converting it, I look to see what function the eggs played in the recipe. If they helped to raise the baked good, I either use Ener-G or I use a flaxseed mixture plus some more baking soda or powder.

In that zucchini muffin, I don't think it makes much difference which you use.  I used the same basic recipe for the peach muffins I posted recently but used flaxseeds instead, and they came out fine.  I'm trying to use flax more often because I think it's slightly more healthy, natural, and available to obtain than Ener-G.
