Guest guest
My garden is going over board on producing eggplants. What can I do with all the surplus eggplants? Some of them are the small white eggs, some are the long fingerling eggplants and some are the large round ones. Any good recipes, or can they be frozen, canned or dehydrated? I like eggplant, but there is only so much I know to do with it and I'm trying to avoid fried eggplant. Michelle in NV
Guest guest
You can make an amazing Asian dish using eggplants and tomatoes. You just stir-fry them together. I like to use some peanut sauce and hoisin with a little chili paste, but you can use whatever you like and serve it over rice. SO good! , " jabaldja " <Petagoatjunction wrote: > > My garden is going over board on producing eggplants. What can I do with all the surplus eggplants?
