If everyone posted what they are having for supper tonight for a week, simple everyday ffv food, that would be greatly inspiring. Last night I did make cabbage rolls, with leftover brownrice, 1 tube of Gimme Lean sausage , an onion , and raisins for filling, Purred tomatos, cumin, paprika and garlic for the sauce. Oh, napa cabbage does not work well, a little to fragile for cabbage rolls. But we have leftovers for me to take to work tonight. Whats for supper? I went Vegan 1 year ago after reading “Eat to Live” and have loved it more each day. Last night for dinner I made the soup Susan linked to on Facebook “Butternut Squash and Black bean Soup”. I added more black beans and left some of the squash in little cubes in the soup. We loved it! I do recommend it! I also made Susan’s “Lite Goddess Dressing” and it was wonderful too. Try it! My meals are even more boring than yours: Monday - pasta with mixed veggies and 2 cans diced tomatoes, asst. spiced added Tuesday - rice and veggies served with soy sauce, chow mein noodles, teriyaki sauce, etc. Wednesday - hash browns with peas, sautéed onions, some tomato sauce for wetness Thursday - pasta with sauce, garlic bread Friday - homemade cheeseless pizza made with white whole wheat flour and loads of veggies Saturday - leftovers Sunday - burgers on ww rolls Add the occasional veggie soup, loaf of ww bread, and salad to the above. We've been having almost the same menu for the past few weeks because there is no way I'm lighting my oven until the outside temps are 70 and under again. Guest guest Posted August 5, 2009 Report Share Posted August 5, 2009 My husband and I have been traveling a lot, so we have been eating a lot of Chinese/Thai/Vietnamese and subway.... But now that we are home I am cooking again. I made a good FF Lima bean soup in a crock pot the other day that didn't even heat up the house. It was super easy. I ate it with an Yves slice sandwich piled with veggies. Monday - Stuffed Cabbage, http://www.fatfreevegan.com/beans/1007.shtml not my favorite, maybe use simpler (pre-made) sauce, and less of it. The cabbage stuffing had a good taste, it was just too soft for my liking though hubby ate lots. Tuesday - sauteed broccoli, zuccini, asparagus with sun dried tomatoes. No recipe, just simple. I add some spices, no recipe, just simple. Wednesday - grilled zuccini and peppers sprinkled with Mrs Dash Lime Fiesta on a wheat tortilla that I also tossed on the grill for a couple minutes to crisp it slightly. Normally I spread the tortilla with veggie refried beans but I didn't have any in the pantry (don't you hate that?!) and I already had the veggies cooking. I also usually grill an onion but I forgot to do that. One of those days! Thursday - leftovers Friday - good question... we have lots of zucchini and peppers from the farmer's market, so I'll probably saute them up (I'll remember onions too!) and grill or broil up a tortilla with tomato sauce with pizza spices and put the veggies on top. Hubby likes the veggie cheese, but it has such high fat and I don't really like it that much. Weekend? Not sure! I'd love to see more people's responses. We all get in our own ruts. Guest guest Posted August 8, 2009 Report Share Posted August 8, 2009 I realize Friday has already passed, but I wanted to share with you a cheese less pizza trick that my husband uses for me that has freed us from the imitation cheeses and presents a nice (simple) sophisticated pizza. We usually assemble our pizza with sauce, cooked veggies ect.. and then after it is nearly done, we toss an entire garden salad of mixed greens (lettuces, baby greens) and drizzle it with Balsamic vinegar, salt and peppers. The vinegar is tart and slightly sweet and the greens wilt a bit (sometimes they even brown a little and get crispy...this is my favorite)It doesn't taste a thing like a cheese pizza, but it is really good. So good that often I end up running out of pizza due to my family members " trying " a slice. By the way I love Tuesday's dinner.
