They are interchangeable with each other, usually.There's no rule of thumb for how much to use because it depends what gf flours you're using them with. They're used in small amounts though - and it would be better to err on the side of caution and have a cake that doesn't quite hold together than be generous with the stuff and have a cake you can bounce off the walls!!
