Guest guest
Apple Butter has to be the simplest spread to make and the most delightful substance ever spread onto homemade bread: Wash a tub of small windfall apples. Dump whole into stock pot, add 2 c water, steam till mushy. Run mushy apples throught a ricer, or use a potato masher and the collander back into the stock pot. Now you have applesauce, you can can that up, or spice it. To continue to applebutter, find a big pot, (dutch oven), that the stock pot fits into. Crumple a wad of foil into the bottom of the pot and set in the stock pot full of apple. If the apple mixture comes above the level of the big pot, make a collar of crumpled foil around the stockpot. Put pot assembly on top of a cookie sheet in the oven and set for 225-250, overnight, or for several hours. Stir well in the morning. The apples should be very thick and browned, but not burned. I've never sweetened apple butter, but it can be done. WTC in hot halfpint jars for 20 min.
