Guest guest Posted July 14, 2009 Report Share Posted July 14, 2009 This was the BIG meal of the day, and took a while to eat. _SUMMER LUNCH SALAD_ 2 cups romain lettuce, torn in small pieces, about a 3rd of the head 1 fuji apple, chopped half cup cooked white beans 1/2 grated raw yam 3 T Black plum walnut vinaigrette Mix and eat! _ BLACK PLUM WALNUT VINAIGRETTE _3 black plums very ripe, seeds removed. half cup walnuts half cup vinegar (I used a white wine vinegar) 3 T white grape concentrate for sweetening (I had this on hand for jam making , other sweeteners would work) Blend till tolerably smooth.
