Hello,

 

Does anyone in this group make their own seitan?  After reading

many different recipe sites I've experimented with different recipes and ways

of cooking it, as well different times and types of kneading it.  I'm

interested in knowing if you make it, how you do it. 

 

Last week a friend gave me some seitan prepared by Vietnamese Buddhists,

and it was THE best I’ve ever had.  Unfortunately, she was not able to

get the ingredients or the name L  It was incredibly addicting

and I ate it all before I got the camera turned on!  It was very dense and it

seemed to be wrapped in seaweed and had a couple of sprouts and possibly

parsley or cilantro with the wrap.  I didn’t recognize the intense

seasonings but I sure wish I did.

 

I have very little space available so I will try to recreate

what I can if I can.

You may have already seen it, but on my blog I have a Coconut-Chai

Cake sweetened with stevia. But it doesn't have to have either

coconut or chai. You can remove those ingredients and the spices and

substitute the flavors of your choice. If you give me a hint of what

you're looking for, I can probably come up with flavorings and

amounts.

online alternative to MasterCook?

I use Mastercook to store and organize my recipes, but am

investigating switching to " the cloud " for this so I can use my

netbook to accumulate and access recipes. Does anybody have an

online recipe database they particularly like? It doesn't have

to have the full functionality of Mastercook, but would would

like some nutritional information and would, of course, like to

be able to add and store my own recipes, not just the ones the

site offers. I would also like a way to easily format recipes

for printing them out, if necessary (but my thought is I wouldn't

need to print out so much with the netbook). Menus, shopping

lists, etc would be nice but not necessary features. I would be

willing to consider a pay site if the fee-to-feature ratio is

good.

BigOven (bigoven.com). You can buy their software, too, for ease of

import/export, which is great and I recommend it, but you don't have

to. And their customer service rocks.

BigOven looks interesting, but I'm not clear if my recipes will be

stored online or on my computer. I really want my stuff stored online

-- my PC is windows based, but the netbook is (will be when it is

delivered) linux based. There's no linux software for this Big Oven,

but I really don't want to download software to the netbook anyway.

 

I suppose you can add recipes to the online database and then tag them

so you can sort of organize them online, but my trial recipe was

cumbersome to add. Am I missing something?

 

(Okay, I did download the trial version of the software and it does look

good, you're right. If I were looking to replace Mastercook with

another desktop program this would definitely be a contender. But it

does look like the recipes are stored on your computer, not on line,

unless you upload them and then they're dumped into the main database

without any way to organize them, other than by tags.)

 

I'll investigate this further, meanwhile other suggestions are still

welcome!

2 lb bag frozen Peas

1/4 cup Lemon Juice

1 teaspoon salt

1 teaspoon pepper

8 cups boiling water

 

Combine all ingredients, bring to boil, blend with submersible blender or food

processor, serve.

I just joined this group this week after reading Dr. Esselstyn's book. I have

been a vegetarian for years. I went fat free, dairy free about 4 days ago and

noticed that my sinus headaches went away. I was bad tonight and had some

cheese on my dinner and had a headache within about a half hour. It seems to me

that it's probably related to the cheese. Has anyone else experienced this, or

is it my imagination or just a coincidence?

 

I love the recipes in the files and also on fatfreevegan blog. My son and

husband were drooling over some of the pictures and wanting me to make some

right away.

One slice of cheese or one sip of real dairy milk and my sinuses clog up

for three days afterwards. It's not your imagination. Dr. McDougall has

mentioned how badly dairy affects our sinuses a number of times in his

newsletters:

Thank you for the info on the headaches. I've been plagued with sinus headaches

for years, some turning into migraines. I don't drink milk because it bothers

my intestinal tract, but never thought about dairy produces affecting my head.

Now I know I'm on the right path. Thank You!

Hi everyone,

 

My hubbie and I are eating far too many burritos now that a great Taco Bar

opened in our town.

 

I've got to start making a healthier version, using less fat.

 

Does anyone (Susan?!!) have a tried and true recipe? From what I've seen on the

internet, you can use milk to use less fat. I wonder if rice milk would be ok?

 

My love-handles will thank you.
