I've never done the calorie counting. My 70 or so pounds loss in 1995 came from eating lots of fresh vegetables, salads, and keeping fat as a percentage of calories (then) 25% or less. Eating as much as one " likes " is sometimes an emotional thing, or taste addiction. I eat until I'm reasonably (yeah, it's subjective) full. Since I don't do added fat, it's not an issue of 'eating as much as I want " as my taste for fat, sugar, and salt, are all gone.... Someone posted about the amount of fruit and veggies exceeding the carbs you eat, and I tacitly concur. Carbing out, so to speak, can be an issue. For me, since I still let myself drink (primarily wine), I find it useful to have some carbs to " buffer " the impact. Still, lotsa vegetables and fruits, most of the time, minimal store-purchased processed stuff. Often (jeez, should take some pictures some day and post 'em) a fresh salad covers HALF my plate, the other fourths being roasted/steamed veggies, and protein something. Varies, but the salad part doesn't that much. I've been following Essy's advice since Feb. 2007, and I've lost around 15 or more lbs. I'm somewhere within 10 lbs. of my college weight (presumably, fit then), and at 50ish years old, I feel great and am told frequently I look around 40 (but then, there's probably a genetic component to that and maybe those people are far-sighted...). I tend to agree with the philosophy that if you eat a diversity of vegetables, grains, fruits, and legumes, and don't do too much " heavy " protein too often (mix it up a bit), and no added fat, in theory, for most people, you should hit a nice balance in " weight. " But then, I do think there are variances in that we are all not the same, physically, at some level. Whether that's significant or not, dunno.
