Need help balancing my diet!!!!

It may help if you look at

www.nutritiondata.com. You can enter all the details of your diet and

have it analysed (free) based on the USDA food database. Currently I am

using it daily. I print out a list of the ingredients of my daily

diet, weigh the items as I use them and enter them under the day

column on the sheet. It is like a school register with the days across

the top and the food list down the left. I buy nothing ready made and

cook in a way that does not tend to change daily. I am still

struggling to make my food really palatable and enjoyable, especially

the mid day meal. The nutrition program enables me to see where I am

deficient. I am finding I have to supplement with mixed tocopherols ie

Vit E and Vit B but then I believe in fairly high Vit B levels and of

course I am getting no B12 without supplementation. I can also see I am

getting no Vit D but I supplement for 2000IU per day. I take 50mg of

seaweed a day for iodine.

 

I was going to ask how people are getting enough Vit E on a no added

fat diet. I follow the advice in the two books one by Caldwell

Esselstyn and the other Colin Campbell.
