Soy sauce is fermented and Bragg liquid aminos isn't, so there's a slightly different taste (Bragg's flavor is somewhat less robust in my opinion, which is not necessarily a bad thing, sometimes a lighter touch is called for). Also, check the ingredients on the soy sauce to make sure it doesn't contain things you don't want in your soy sauce (artificial coloring, sugar, etc) if you care about that. Bragg's has only soybeans and water. Bragg's is lower in sodium than "full strength" soy sauce (but still a high-sodium product), but similar to low-sodium versions of soy sauce. I tend to use reduced-sodium soy sauce in recipes that I think of as more "Asian" in nature and Bragg's in other recipes where I think it would just add some light flavor.
