Hello Issy, I'm not Teresa (and I hope she answers too!) -- but I love talking

about what I eat, and I've also recently reread ETL..... Without the book in my

hand it is dangerous to try to quote his plan but I think this is the

core of it:

1. eat unlimited amt of raw green veggies (try to eat a pound a day)

(his definition of raw green veggies includes carrots and mushrooms and red

peppers and some other non-green things).

2. eat unlimited amt of cooked green veggies (try to eat a pound a day)

(his definition of cooked green veggies excludes cooked carrots, but includes

things like onions and mushrooms.....)

3. eat unlimited fruit (but no fruit juice or concentrates)

4. eat up to one cup of grain OR starchy veg a day (e.g. cooked potatoes,

rice, etc)

5. eat unlimited beans and legumes (try to eat at least a cup a day)

 

Now I'll check the book and see what I missed :)

 

Okay here is what I missed:

a. fruit: try to eat at least 4 a day (and amt is unlimited)

b. fruit: this is FRESH fruit

c. you are allowed to also eat up to 1 oz a day of nuts, 2 oz a day of avacado,

and 1 T a day of ground flaxseed.

d. he lists as " off limits " " between meal snacks " . (This is a rule I

totally ignore

and find very questionable.)

 

For me, the big changes are that I have to REMOVE nuts and avocado. I haven't

removed them entirely but I'm eating a lot less. I'm also adjusting

to not drinking

orange juice, which I normally drink a lot of. I am still working

out how exacting

I want to be about which parts -- and, actually, I'll probably always

be " working

it out " -- always adjusting.

 

I think my daily food is a bit unusual, but I'll tell you anyway:

1. soon after arising: either powdered green barley powder (mixed in water) or

a couple handfuls of wheat grass (which I grow) blended and strained.

Sometimes also a couple of blended tomatoes.

2. Later in the morning: a " green smoothie " -- blended together:

a lot of fruit (e.g. oranges, apple, frozen strawberries, banana),

some greens

(e.g. spinach, parsley, beet greens, swiss chard,dandelion greens, etc)

1 T flaxseed, 2 T sesame seeds, often some yogurt and/or rejuvelac

(a fermented water made with wheat sprouts)

3. sometimes also @ late morning: a few handfuls of alfalfa sprouts

(sometimes mixed with clover or broccoli or other sprouts)

4. lunch: salad, made with lots of various interesting things to entertain me.

e.g. romaine, grated carrots, celery, grated beets (or canned beets),

canned artichokes (packed in water), cooked broccoli, homemade

sauerkraut (which is high salt but probiotic), parsley, mint, tomatoes,

garbanzo beans, kidney beans, etc.

Dressing made of veggies and spices, and often some avocado (but not

gigantic amounts.)

5. snacks during the day: herb tea, green tea, grapes, sweet peppers,

sweet peas, etc.

Also dried whole wheat pita bread (which contains oil and is about

10% of calories from fat).

6. dinner: microwaved veggies -- often with a tomato sauce.

7. later: often some fruit or (homemade) juice kefir (which contains

some sugar and thus is not in the guidelines).

 

That's what I eat much of the time -- though the above is more likely the

pattern on days I work than on days I am at home. At home I'm more likely

to have soup to eat, and I've eaten big batches of burritos recently.

[whole wheat tortilla, brown rice, oil-free refried beans, lettuce, onions,

tomato sauce.....)
