They also use a lot of coconut milk which is high in fat. Don't get me wrong I LOVE indian food. I just bought a cookbook off amazon called fat free and easy by Jennifer Raymond and it has a lot of wonderful recipes. Do you find any coconut milk of ghee in that or is it more true to vegan lifestyle? Also I sometimes worry about the fat content of items like that...let me know anyone! Celena The stuffed grape leaves I can get in the local Middle Eastern restaurant are vegan, but you can tell that they have tons of olive oil in them. That plus white rice makes them unappealing to me. I once made a healthier version at home. It wasn't a perfect recipe and if I were making it again today I'd make changes, but you can see the basic technique, if you'd like to try to make your own. You can make great dishes yourself, dal particularly, without using the oil, but you probably won't be able to find it oil-free in a restaurant.
