I noticed the 1 cup, too, but also noted that the recipe says " 10 to 12

servings. " There are 16 tablespoons in a cup, so we're talking maybe a little

more than a tablespoon of cashews and probably an even smaller amount of tofu.

 

1 TB of raw cashews is around 3.0 grams of fat. You could " pig out " have 2

servings and not exceed a half day's worth of fat on the low end (assuming the

tofu is lite and not significant). Essy recommends 14 to 20 grams of fat per

day maximum.

 

IMHO, that mitigates the fat issue. Also, it's not added fat (via oil). Yeah,

not fat free, but still very very low fat vegan (especially compared to tofu or

cheese (even faux cheese) based alternative lasagna).

 

The suggested alternatives posted would work. Drained canned beans, rinsed, and

blended with the bread crumbs do so as well.
