flaxseed as an egg replacement?

Hi Susan,

 

Could you please say more about using ground flaxseed as an egg replacer?

I haven't heard this before and it sounds great.

I grind 2 or 3 T of flaxseed each morning in a coffee grinder, then

dump the ground

flaxseed into my blender --- where it becomes part of my green smoothie.

So, I have lots of flaxseed on hand, and am used to grinding it up.

All I need to know is how much to use in place of an egg, and any comments you

have on whether this really works well in recipes.

Grind 1/4 - 1/3 c flax seeds in a coffee grinder, place in a blender with 1 c of water & blend away!  1/4 c of this mixture is eqivalent to 1 large eggSent from the iPhone of a HenOn Jan 9, 2009, at 23:36, Moria Merriweather <moriam wrote:

Hi Moira,

 

I use flax as an egg replacer in things like burgers, cookies, cakes,

and anything else I want to stick together. It does not provide

leavening, so if you're using it in a cake you have to rely on

something else to make it rise. I do it very simply. I keep a bag of

ground flaxseeds (do them about 1/2 cup at a time in my blender) in

the freezer, so about 10 minutes before I want to use them, I mix 1/2

tablespoons of ground flax with 2 tablespoons of warm-hot water. I

let it sit until it has thickened somewhat. Then I use it in place of

1 egg.

 

I never do this for more than two eggs--that seems to be too much

flax. Besides egg replacement, I like to use ground flaxseeds in

salad dressings to thicken them up. I just add a teaspoon or two to

the dressing, mix well, and let it rest until it thickens, usually an

hour or two.

just received the several posts in response to my thanks to Susan re:

Apple Cinnamon Swirl Pancakes.

 

I used 1T ground flax seed to 3T hot water for each egg equivalent.

I

stirred it, and let it rest for a few minutes until it thickened.

 

(Apparently: by the posts, there are various proportions that seem to

work).
