Guest guest Posted January 8, 2009 Report Share Posted January 8, 2009 A duff is a steamed flour-based pudding- like the traditional English plum pudding or figgy pudding. I make an apple or blackberry duff sometimes, in the winter. We serve it with maple syrup or a little milk and brown suggar Fruit duff 4 cups Fruit- fresh , canned or dried and rehydrated- apples, peaches, blackberries, cherries, plum 2 cups whole wheat flour, or half flour, half oats or cornmeal 1 teaspoon Salt 1 cup light brown or raw Sugar 4 teaspoons Baking powder 1 teaspoon Lemon juice ¾ cup soy milk Mixs the fruit and sugar together , adding a teaspoon of lemon juice if it needs tartness. Sift together flour, baking powder and salt together .. Stir in the milk . Pour the fruit mix into the batter and stir together. Line a mold with parchment, or butter it. A covered pirex dish works well, or a metal mixing bowl tightly covered with foil. Set in a colendar or steamer in a stock pot with a couple of inches of water in the bottom, Cover, bring to a boil and steam the duff for three quarters of an hour .
