Redwood (a UK company) makes excellent Thai 'fish' cakes - they're so fish-like that they make vegetarians nervous!! I'm assuming you're in the US - Redwood have just started exporting their soy cheese, Cheezly (for which I'm the NZ importer) to US but not sure if they're sending their fake meats over too. As for cottage cheese - not something I miss! I do make a really nice tofu-based ricotta from the lasagne recipe in Isa Chandra Moskowitz's 'Veganomicon' .
