They serve it in their salad bar and the ingredients can be found in their market. It wasn't difficult to recreate -Taco Salad1/3 package Soytaco (or find one in your area)1/2 head cabbage shredded1 carrot shredded1/4 cup rice cheese (yellow) shredded or use nutritional yeast. 1/2 cup cilantro chopped4 tbls vinegar or to taste1 lime squeezed1 small onion1 serrano chile1 clove garlicsaltpepperDice onion, chile, garlic and sautee with soytaco. (let cool)Combine all the ingredients.Refrigerate 30 minutes.NOTE: Soytaco contains some canola oil so go lightly, just enuff to flavor and coat the salad. Or find a differnt manufacturer who uses no oil. While the salad is chilling I like to make corn tortilla chips - Place corn tortillas on oven rack, set oven to 300. Turn once when they begin to lightly brown (around 5 minutes), cook another 5 minutes.They brown very quickly when they start to brown so watch em!Break into quarters over bowl using your hands.Serve with salad.
