I used white rice, bound together w/egg, for sweet pies, and whole wheat rice, w/egg & some grated cheese, for savory pies. Of course that's not vegan, but is there a way you could bind the rice together with something else? Bananas & e-nergy, maybe? Not an answer obviously, but maybe you'll get an idea you can adapt. We use grape nuts and ground flax seeds and water (which is not all together fat free and can be omitted) and apple juice concentrate.
