But for the person who asked, my blog has quite a few posts dealing with they " whys " and it's all documented such that you can examine the sources yourself and make your own decisions as to veracity. Guest guest Posted September 15, 2008 Report Share Posted September 15, 2008 Rose, I've recently " converted " to the " fat-free " vegan way of eating after reading many of the books suggested in posts by the others (generally I practice " low fat " I guess, since I enjoy a few nuts each day.) As I understand it, the reason for not adding oils/fats into the diet is: A. Recent studies show that even a single high-fat meal causes microscopic damage to the lining of the blood vessels. Over time, that increases the likelihood of a plaque breaking free and causing a heart attack or stroke; and B. If you eat a vegan diet that is reasonably well-rounded (e.g., favors minimally processed foods, includes some soy which is naturally high in fat, etc), then you will already get all the fat your body NEEDS. For me, this little video of Dr. Neal Barnard has proven to be the most easy-to-digest (pun intended… sorry!) " quick primer " on the benefits of " fat-free " veganism.
