Guest guest Posted September 12, 2008 Report Share Posted September 12, 2008 Squash Soup 1 butternut squash, peeled chopped into chunks 1 sweet potato peeled and chopped into chunks 4 white onion cut in half 24 baby carrots 8 cups of water 2 veggie bouillon cubes (low sodium if you can find it) {or use 8 cups veggie broth and eliminate bouillon cubes} 1 tbsp dried tarragon 2 1/2 tbsp dried parsley 1 tsp cumin (if you like it) As much garlic as you dare (I love huge amounts of garlic) Bring 6 cups of water to a boil. Add squash, carrots, sweet potatoes and onions. Boil until they are fork tender but still intact. Remove all veg from pot (leave the water in the pot). Blend the veg with the dried herbs, cumin, garlic and small amounts of the remaining 2 cups of water. Add bouillon to boiled water. Add the blended veggies back into the boiled water.
