Guest guest Posted September 8, 2008 Report Share Posted September 8, 2008 Late last week I posted a, well, critique of a fat-ladden " Ratatouille " recipe posted on an award-winning vegan blog. A few days ago, I received a polite reply from Urban Vegan that, although welcoming the discussion, disagreed considerably with my post. It's taken some time to get to this, but I finally posted a rather long " rebuttal " and explanation of my perspective on the issues of " olive oil being healthy for you, " " a little fat won't hurt, " and " if it tastes rich and fat you're likely to eat less. " My response encapsulates much of what most of you probably already know or have read, but I thought I'd mention it anyway. Mayhap some of my phraseology will be useful for others when faced with the same issues. It's going to be a long battle, m'friends... the issue of what's healthy is ladden not just with added oils, but with sooooo many myths and so much misinformation. But maybe, as every little bit of added fat is potentially a plaque former and heart attack initiator, perhaps every attempt to correct the misunderstandings will prevent same.
