My husband and I are vegans and are enjoying the health benefits. We haven't been vegan for very long, but we're already seeing the good! Although this group is fatfree, we're not. Although I don't fry much, I rarely cut back on oil unless it's ridiculous. I find, for me, the vegan diet is not especially high in calories, so I allow more oil than probably you all do. But I'm here for the recipes, the wisdom, and to learn and share. I'm also enjoying cooking - probably for the first time. I'm using the following books which I find wonderful and I'm sure they can all easily be adjusted for fatfree or low-fat, especially the Zen one: Vegan Planet, Robin Robertson I haven't gotten a bad result from anything in this book. The Mediterranean Vegan Kitchen, Donna Klein Despite my Jewish last name, I'm actually a 3rd generation Sicilian. And this book just sings to me! Lantern Presents The Vegan Family Cookbook, Chef Brian P. McCarthy Everything in this book is easily and plainly laid, probably because older children and teens can use it. I absolutely love their "Moroccan Black Bean Stew" - it has some curry in it! Wow! The New Now and Zen Epicure, Miyoko Nishimoto Schinner Although this is more gourmet-ish, it's friendly. When I feel like "chef", I'll try something from this book. The beginning of it is wonderfuly descriptive and educationa. Everyday Vegan, Jeani-Rose Atchison Just like it says - everyday food.
