Remember, although this recipe calls for grinding the beans while they are still raw, it does not call for eating the resulting batter raw. The beans - in the form of the flour they create when ground - are then cooked in the waffle iron. Therefore, no one is consuming raw beans. People who follow gluten free diets have been using flours created with beans for years and years. Remember, they cook with the flour - not eat it raw. Secondly, I am not 100% sure of the accuracy of the information regarding the toxicity of raw beans. The FDA has had on their website for years that beans must be combined with grains to create a complete protein - and this myth was discredited years ago - yet the FDA continue to post it. Also, there has never been a reported case of toxicity due to raw kidney beans in the US - according to another site. If concerned - don't use red kidney beans in the recipe. I hope this helps calm everyones fears. Since then, and having provided other links as well, I've always made it a point to remind folks to boil their beans for 10 minutes before lowering the heat. The big culprit is crockpots, when not using pre-boiled or canned beans. I think we were just surprised that a waffle iron would heat them up sufficiently and for long enough. So, I pointed out the statement about undercooked being worse than raw, since maybe they're actually closer to the latter than the former. Also, the effect is " dose " -dependent, so as an ingredient in a waffle, you might not notice, even if there were some lectins present. It was not my intention to besmirch the recipe. I use beans prominently in my own creations, as evidenced by http://www.vegandonelight.com The FDA. I tend to agree. Let's not go there. My guess is that grinding the beans up in the food processor before putting them in the waffle iron makes them get more thoroughly cooked throughout in a short amount of time than if they were whole beans.
