This MAJOR move (me happy dancing!) was accomplished without a word from me. I don't know what turned his head on this, as I cook my vegan stuff, and and his omnivore stuff a few times a week. The man will miss Fettucine Alfredo, and I would really like to concoct a good garlicky creammy non-fat vegan version. Thinking silken tofu, blended with a light bit of cornstarch and soy milk, for the base... Anyone have an actual recipe, or a very cremy white sauce ? I'm sure whatever you cook will be most wonderful, but when switching from lots of buttery cheese sauce to a no (or new) cheese sauce, you don't want his recent memory of the one he loved so much to compete with the new one, lol. Guest guest Posted July 22, 2008 Report Share Posted July 22, 2008 That is a very good suggestion, Rhonda. Im not pushing the change, and it will be slow if he does commit to it 100 percent. At 53, and overweight, he stands to benefit from any changes made in his diet. He sees the change in me, how much leaner and healthier I've been getting, and that has been the catalyst. He did by some burger to go with his refries last night while I was at work. He said that if he wanted meat, he would cook it himself while Im not at home. Thats such a far change from the old 3 cartons of icecream in the freezer that it really tickled me. Although I started back to being a fat free vegan in the beginning of the year purely health reasons, the ethical and ecological ramifications are not lost on me. This way of eating, no matter why you adopt it, changes you in spirit as well as physical being. Clear skies! My partners didn't believe me when I told them the Tahini Rotini wasn't alfredo sauce, or didn't at least have parmesan in it.
