Guest guest Posted July 17, 2008 Report Share Posted July 17, 2008 I sautee in red cooking wine and tamari (soy sauce), or rice vinegar or any vinegar and/or wine. I never use oil anymore for stir-fries. Also, sauteeing can be done with 1/4 or less of the oil people often use. I just baked squash seeds with 1/2 teaspoon of EV olive oil and dropped them on a paper towel. Very little oil and so delicious. My next thing will be to manage it without any oil. Any ideas? I covered a cookie sheet with foil, and then sprayed it with cooking spray before spreading the seeds out on it. I didn't add oil (other than the spray). I do remember that it is important to cover them lightly with foil to keep them from jumping out all over the oven as they bake.
