As this is a " fat-free " (no added fat) vegan list, you might want to try the

recipe without the TB of olive oil... a little water (or most likely, that which

is already on the drained tofu) will produce similar results without the added

fat.

 

If you use a good " non-stick " sheet, you won't need to oil it.
