If you like it hotter, add more chili powder or even a can or shopped fresh green chiles. Don't like spicy (like me)? Just omit the chili powder altogether. No tomatoes where you live (like in my city)? Use canned. I use 1 can no salt added diced. I also used no salt added tomato sauce, so the sodium content in the Nutritional info below would be much less. This makes a *lot* - fills my old orange and brown 30 year old Rival pot. It says it makes 6 servings, but each "serving" in this case is about 2 cups because of the veggies. This will be dinner and a few days' lunch. In a later post I corrected myself about how much it makes because I forgot I usually double the recipe and had to add more stuff to the crockpot half-way through. *Then* I added 2 cups of cooked leftover rice.
