Joan Mershon's Spanish Rice - oldie but goodie

This is my favorite Spanish rice recipe, and what's going into the Crockpot in a few minutes. If you like it hotter, add more chili powder or even a can or shopped fresh green chiles. Don't like spicy (like me)? Just omit the chili powder altogether. No tomatoes where you live (like in my city)? Use canned. I use 1 can no salt added diced. I also used no salt added tomato sauce, so the sodium content in the Nutritional info below would be much less.

 

This makes a *lot* - fills my old orange and brown 30 year old Rival pot. It says it makes 6 servings, but each "serving" in this case is about 2 cups because of the veggies. This will be dinner and a few days' lunch.

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 1 large onion -- diced 1 large green pepper -- minced 2 medium tomatoes -- peeled and quartered 15 ounces Tomato Sauce 1 1/2 cups Water 2 teaspoons Chili powder 2 teaspoons Worcestershire sauce -- vegetarian 1 1/2 teaspoons Garlic powder 3/4 cup Brown rice 2 tablespoons Salsa

 

Stir all ingredients together. Cover and cook on low 7-10 hours.

Hi Sue... in this recipe, are you using adding the brown rice into the mixture cooked or uncooked?

This is uncooked, dry brown rice.

 

In a later post I corrected myself about how much it makes because I

forgot I usually double the recipe and had to add more stuff to the

crockpot half-way through. *Then* I added 2 cups of cooked leftover

rice.
