There are loads of " recipes " around where you just add a can of this to

a bag of that. The Files section here should have a bunch of them, and a

web search for something like " 3-ingredient " and " vegan " will probably

turn up thousands more.

 

But if you want a book to follow, there's the McDougall Quick and Easy

Cookbook, where all recipes take 15 minutes or less (some require

already cooked rice), and I recently bought Nava Atlas's Vegan Express.

Bryanna Clark Grogan has 20 Minutes to Dinner, Debra Wasserman has

Conveniently Vegan, and my library has one called Express Lane Vegan

Cooking, or something like that.

 

If you go to the McDougall web site

and look over some of the newsletter archives, you'll find a few recent

articles by Mary McDougall with one-pot meal recipes, mostly soups and

stews.

I just ate a sandwich that was very tasty, healthy and pretty quick

and easy (if you have a food processor.)

 

You may want to play with this recipe to get the spices the way you

want them. I got it from a blog and some of the ingredients were just

listed as " spices " so I kind of made the seasonings up as I went

along, according to what sounded good at the moment and will probably

keep playing with it to get it just right for me.

 

Red Bean Sandwich Spread

 

Ingredients:

1 can dark red kidney beans, drained and rinsed (look for low-sodium beans)

1/4 cup ketchup (even better if you get organic, no-sugar, low-sodium)

1 teaspoon onion granules (the coarse powder)

1 teaspoon garlic granules

fresh ground black pepper (I used about 16 twists of the grinder)

1/4 teaspoon cayenne pepper (I might cut it back to 1/8 teaspoon next time)

 

Directions:

Put everything in a food processor and grind until smooth. Add extra

ketchup if necessary to get things moving well. Spread on whole grain

bread and top with veggies of your choice: onion slices, tomatoes,

green leafies, etc. Store left-overs in the refrigerator. Is tasty

when used cold or room temperature.
