Dinner gravy

The book by Myra Cornfeld ( The Voluptuous Vegan) is one of my favorites for vegan recipes, although I do have to modify them to eliminate fat. She has a great recipe for Lima Bean gravy, that has two TB of oil to saute onions, but of course that could be eliminated by sauteing in water. The recipe calls for onions, hot pepper flakes, ground cumin, ground caraway seeds, lima beans, and lots of garlic (which isn't all that garlicky since she cooks the beans in a pressure cooker with the cloves), and lemon juice, salt.

 

2 med. onions, diced (about 2 c.)1/4 tsp red pepper flakes1 tsp gr. cumin2 tsp gr. caraway seeds1 1/2c. dried limas, soaked & drained4 c. water8 garlic cloves, peeledbouquet garni: sprigs of thyme, rosemary, 1 bay leaf, 1 tsp black peppercorns1 1/2 tsp salt1 TB lemon juice

 

Cook the beans with the bouquet garni, & garlic w. water until very soft in a pressure cooker. (I use my crockpot.) Remove the bouquet garni, and puree the beans & garlic. Saute onions until soft, along with the spices, and add to the beans, w. salt, & lemon juice. Peggy K.

 

"Anyone got any suggestions please for a substitute for my tub of gravy granules? I need something fat free to go on the Sunday dinner and all the gravy recipes I've found so far have oil in or miso, which I can't get hold of."

Thank you so much everyone for the gravy ideas and recipes. I've written them

all down

and plan to try each one.

I've just finished dr Esselstyn's book, thanks to the reccomendations on this

list, and

thought it was fabulous. On friday I made fat free oven fries and today we had

fat free

roast potatoes with our Sunday dinner. I'm afraid I stuck with the old gravy

granules

just for today as I was trying everything else fat free and couldn't concentrate

on

changing so many things at one time. I will try the gravies one at a time now

and find

one that we like. They all look delicious and I do have some yeast flakes here

to try.

p.S. the dry roasted potatoes were fabulous! I just dipped the potatoes in some

veg broth

before roasting.

Ooh, thanks for the recipe, Peggy. It looks really good! It went on my

" to try " list and Voluptuous Vegan (which I hadn't heard of before)

went on my " to buy " list! Thank you so much! You rock!
