Guest guest Posted June 21, 2008 Report Share Posted June 21, 2008 Tabouli Mediterranean cracked wheat salad Low fat, Optimum nutrition 1 cup bulghur, drained (1 cup boiling water poured over 1/2 dry bulghur to soak. Drain. 1 c. small cooked small white or canelli beans. 1/2 large cucumber, finely diced 1 large tomato, finely diced 1/2 finely chopped onion, or 2T dry minced onion 2 t " Mrs Dash " type lemon pepper 6 large garlic stuffed olives, (or equivalent olives and garlic) finely mince. 2 T marinade from the bottle of garlic olives 2 T lemon juice, or one whole peeled lemon, finely chopped. 2 c. very finely minced kale 1/2 cup minced fresh parsley or dry equivalent. 1T fresh chopped spearmint, basil or dill, or any combination to taste. Dried herb equivalents may be substituted. Drain bulgher and mix everything in salad bowl. Chill for at least an hour, better even the next day. Entire recipe: Calories: 714 Fat: 5.2g Protien:34.1g Carbs: 142.7g fiber:24.7g Terrific on a hot day with a tall glass of iced tea and melon for desert!
