Guest guest Posted June 14, 2008 Report Share Posted June 14, 2008 Hello, I am new to the group, so I thought I'd introduce myself. My name is Jennifer. I have been married to my husband Chuck for almost 11 years and we have 4 sons (8,6,3,1) which we homeschool. We are North Carolinians. I gave up dairy and meat in November of this past year and then in January gave up eggs. Though I wasn't overweight, I lost 10 lbs, I also completed my first sprint triathlon in last weekend. I feel like I am in the best shape of my life. When I began this journey is was to improve my health, but when I began to read about horrible conditions of the animals, it became about so much more. My husband, who was a huge meat eater, went vegan with me a month ago. I begged him to try it for a month. He has stuck with it. I am so proud of him. He has Type 1 diabetes, so this can only help him. My boys still eat organic, free range meat about 2 times per week. I really wish they were vegan, but not quite yet. Though, I am getting sick of cooking the meat for them. It is so funny when we tell people, they always ask, what do you eat?, like when you take out animal products, there is nothing left. My husband hushed them at work when he said, " Last night my wife make grilled portabellas withs spicy avocado sauce. " Then they end up wanted to eat what we are eating! I love cooking and have been using cookbooks by Dreena Burton and Robin Robertson to keep things exciting. Looking forward to getting to know you!
